TASTING NOTES

Dark dense colouring. A fusion of black currant, blueberry, and dark chocolate that flows into a cigar box note, lights up the senses. Followed by a sweetness that is indicative of phenolic ripe fruit. The plate entrance is smooth, ripe, and expressive of Cabernet Sauvignon as the dominant varietal. Cassis and sweet berry fruit fill the midpalate while the ripe tannin structure adds an elegant touch to the palate weight of this wine. The wine lingers with ripe sweet fruit and just enough limey notes to refresh the palate. This wine has a beautiful depth of phenolic ripe fruits.


WINEMAKING NOTES

The Nemrac fruit is all handpicked and berry sorted to ensure all the fruit is in perfect condition before the fermentation is initiated. All batches are individually fermented to ensure the purest expression of each varietal. We amplify the varietal expression and flavours with specific winemaking extraction techniques in the cellar. Our aim is always to showcase the natural sweet edge of each varietal, fused with the varietal express. The individual varietals are matured in French oak barrels for 12 months, blended, and matured for an additional 3 months. The final blend consists of 15% new French oak with the balance matured in 2nd and 3rd fill barrels.


VINEYARD NOTES

The Nemrac 2021 – a blend of Cabernet Sauvignon (84%), Petite Verdot 8% and Shiraz 8% fruit. The blend represents 92% fruit grown in Paarl and 8% in Stellenbosch. In both regions, the fruit is grown in Tukulu decomposed granite soils. The average age of the four different varietals comes to 18 years. All fruit is grown under dryland conditions. These dryland conditions are alleviated with the soil build-up techniques employed to retain the moisture content of the soils.


FOOD PAIRING

The Nemrac will pair well with an aged steak, beef Bolognese, or a hearty oxtail stew.


AGEING POTENTIAL

The Nemrac 2021 has all the attributes for long ageing. A ripe tannin structure followed by the purity of fruit adds depth to the ageing ability of this wine. Coupled with a fresh acidity that is made seamless with just enough oak influence.
